The journey starts long before the roasting process. Selecting and sourcing the green beans is a considerable part of the work. It seems difficult to make great coffee out of poor beans, so choosing beans that are carefully harvested and consistently high in quality is essential. This attention to detail at every stage will make the difference in the final cup.
